@ohigrow When a plant is well watered it’s internal plumbing is pumping and under pressure. Cutting a stem disrupts the water/sap flow and pressure within the plant’s xylem causing guttation through special pores called hydathodes. The purple color comes from the presence of the flavonoid anthocyanin.
